Bacon Wrapped Asparagus Bundles with Sorghum Dressing
These Bacon Wrapped Asparagus Bundles won’t last long! The sorghum in the dressing, which you glaze the bundles with and serve them with, adds a depth of flavor you just don’t get from molasses or honey and isn’t as sweet and works very well with the smokiness of the bacon. While the roasted vegetable seasoning gives it an earthy flavor that amplifies the asparagus.

These make a great side dish to a grilled protein, as well as an easy appetizer. The asparagus can be seasoned and wrapped ahead of time, and the dressing can be made ahead as well.
Ingredients
- 1 pound asparagus
- 1 tablespoon extra virgin olive oil
- 1 teaspoon The Old Mill Roasted Vegetable Seasoning
- 8 slices bacon
- 1 tablespoon The Old Mill sorghum
- 1 teaspoon Dijon mustard
- 3 tablespoons The Old Mill Balsamic Vinegar Strawberry
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat oven to 400F. Trim asparagus and toss with 1 tablespoon olive oil and vegetable seasoning.
- Bundle about 3 asparagus spears and wrap each with 1 slice bacon, securing with a toothpick if needed. Arrange in a single layer on a rimmed baking sheet. Bake 20 minutes. Turn on broiler and broil 5 minutes or until bacon is well browned and crisp.
- Whisk together sorghum, mustard, vinegar, salt, pepper, and parsley. Brush over asparagus bundles and serve any additional dressing alongside.
